Apple Filo Pies!
It’s officially Autumn! So it’s time to dust off the apron and get your baking on!
Ingredients:
4-5 medium-sized apples, peeled, cored, and thinly sliced
1/4 cup water
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
6 sheets of filo pastry
1/4 cup melted vegan butter
2 tablespoons maple syrup
2 tablespoons cornflour
Instructions:
1. Preheat your oven to 175°C and lightly grease individual ramekins.
2. In a saucepan, combine the sliced apples, water, cinnamon, and ginger. Cook over medium heat for about 5-7 minutes, or until the apples are tender but not mushy.
3. Spoon the cooked apples into the prepared ramekins, filling them about three-quarters full.
4. In the same saucepan with the leftover liquid from cooking the apples, add the corn four and whisk until smooth. Cook over medium heat for 2-3 minutes, or until slightly thickened. Pour this mixture evenly over the apples in the ramekins.
5. Top with chopped walnuts
6. Take one sheet of filo pastry and scrunch it up lightly. Place it on top of the apple mixture in each ramekin.
7. Brush the tops of the filo pastry with melted vegan butter and drizzle with maple syrup.
8. Place the ramekins on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the filo pastry is golden brown and crispy.
9. Remove from the oven and let cool for a few minutes before serving.
Enjoy your delicious apple filo pies warm, with a scoop of vegan ice cream or a dollop of coconut whipped cream if desired!
