A gut-friendly, refined sugar-free option with each refreshing sip beating the summer heat.
Our twist? We infused ours with kaffir lime leaves that provides a delicate, sweet lime fragrance and naturally sweetened it with coconut sugar.
Kaffir Lime Leaf Lemonade Recipe
Ingredients:
6 kaffir lime leaves, plus extra for garnish
1/2 cup coconut sugar
1 cup water
1 cup lemon juice (approximately 5-6 lemons)
Soda water
For the Kaffir Lime Leaf Lemonade:
1. In a small pot, combine 1 cup of water and 1/2 cup of coconut sugar. Stir well and place over medium heat.
2. Stir continuously to ensure the sugar dissolves evenly and swiftly. Bring the mixture to a boil. Allow it to boil for 1 minute.
3. Stir in the kaffir lime leaves, then set the mixture aside to cool and infuse with the limey flavour. Ensure the lime leaves are not added to the sugar and water before it reaches a boil to prevent crystallisation of the syrup.
4. While the syrup is cooling, juice the lemons until you obtain 1 cup of juice.
5. Once the syrup (strained of leaves) has cooled, mix it with the lemon juice and soda water to taste. Stir the mixture thoroughly and add ice as desired.
