Pickled Red Onions

The ultimate way to level up your sandwiches, tacos, salads, bowls and wraps!
Introducing, pickled red onions. They’re sweet, tangy and so easy to make. We always like to have some in our fridge for an instant flavour and texture boost whenever we need it.

Ingredients:
2 Red onions
1/4 cup Water
1/2 cup apple cider vinegar
1/2 cup rice wine vinegar
2 tsp Sugar
Salt (to taste)
Mustard seeds (to taste)
Chili flakes (to taste)
Star anise (to taste)

Method:
1. Thinly slice red onions and pack them into clean mason jars, filling them as much as possible.
2. In a pot, combine water, apple cider vinegar, rice wine vinegar, sugar, salt, mustard seeds, chili flakes, and star anise. Bring the mixture to a boil.
3. Once the pickling mixture is boiling, carefully pour it into the packed mason jars over the sliced red onions.
4. Screw on the lids securely and place the jars in the refrigerator for at least 1 hour.
5. Enjoy your homemade pickled red onions as a delicious, tangy addition to your meals!
6. Store in the refrigerator for up to two weeks.
