Corn Fritters

Ingredients:
(Serves 2-3)

1 can of creamed corn
½ cup steel cut oats
1 tbsp corn flour / tapioca starch
1 -2 tbsp Cajun
1 tbsp onion flakes
Pinch of salt and pepper
1 tsp olive oil
Optional:
1 tsp chili flakes
1 spring onion
1 tbsp nutritional yeast

Method:
1) Add your steel cut oats to a Nutribullet and blend to make oat flour.
2) Combine all ingredients into a bowl and add any optional ingredients that you would like to include.
3) Heat a non-stick pan with the olive oil and use a ¼ cup to make 6 fritters. Cook for 3 minutes, flip and cook for a further 3 minutes.

To serve:
This is great served as a snack for the kid’s school lunches or served for a savoury brunch with spinach or rocket, smashed avocado, cherry tomatoes, with a drizzle of pesto.
