Sticky Harissa Carrots and Cannellinis

Spice up your potluck with these Sticky Harissa Carrots and Cannellinis! A perfect mix of spicy and sweet on creamy yogurt. Simple, delicious and sure to impress! 🌶️🥕

Sticky Harissa Carrots and Cannellinis Recipe:


450g Carrots, washed and sliced lengthwise
1 Tbsp Olive Oil
1.5 tsp Salt
1 tsp Cinnamon
1 can Cannellini Beans, drained and rinsed
30g Harissa Paste
60ml Maple Syrup
240g Coconut Yogurt
30 ml Lime Juice
1 clove Garlic, minced
1 tsp finely chopped Chives
Salt and Pepper, to taste
Chopped Parsley, for garnish


1. Preheat your oven to 200°C.
2. In a bowl, combine sliced carrots with olive oil, salt and cinnamon, ensuring the carrots are well-coated.
3. Place the seasoned carrots on a baking sheet and roast in the preheated oven for about 15 minutes or until slightly tender.
4. In another bowl, mix cannellini beans with harissa paste and maple syrup.
5. Take the partially roasted carrots out of the oven and combine them with the bean mixture. Roast for an additional 10 minutes or until the carrots are tender and slightly caramelized.
6. In a separate bowl, mix coconut yogurt with lime juice, minced garlic, finely chopped chives, salt, and pepper.
7. To plate, spoon the yogurt mixture onto a serving plate. Top it with the roasted carrot and bean mixture.
8. Sprinkle chopped parsley over the dish for a burst of freshness.
9. For an extra touch, drizzle a little more of the yogurt mixture on top.
10. Serve and enjoy this easy, simple and impressive dish at your potluck gathering!
