
Smashed Cucumber Salad

Smashed Cucumber Salad
Ingredients:
1 cucumber
10g salt Salt
Dressing:
3 tbsp Rice wine vinegar
1 tbsp Sesame oil
1/2 tbsp Sugar
Aromatic oil:
1/4 cup Vegetable oil
2 tbsp Peanuts
1 tbsp Sesame seeds
2 tbsp Chives
Chilli flakes to taste
5 Garlic cloves
Method:
1. Slice cucumber length ways and smash with a rolling pin. Cut into bite sized pieces.
2. Salt cucumber and leave to sit for 20 minutes.
3. To make the dressing, combine rice wine vinegar, sesame oil and sugar. Stir until sugar has dissolved.
4. In a small pot, heat oil over medium heat until hot and pour over your chopped garlic, peanuts, chives, chilli flakes and sesame seeds.
5. To prepare the salad, drain cucumbers and mix in dressing, aromatic oil, mesculin and garnish with fresh herbs, we used coriander and mint.
