Gingerbread Nice Cream Recipe
Ingredients:
• 1 cup carrots chopped
• 1.5 cups bananas (riper the better)
• 2 Tbsp coconut oil
• 2 teaspoon ground cinnamon
1/2 teaspoon allspice
1/2 teaspoon cardamom
1/2 teaspoon coriander
1 teaspoon nutmeg
• 1 teaspoon ginger
• 1/4 coconut milk (chilled)
2 Tbsp. Maple syrup
Shredded coconut (to top)
Instructions:
1. Add carrots and bananas, coconut oil, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg to lined oven tray and cook at 180 degrees celsius for 30 minutes.
2. Allow to cool, place on tray with parchment paper, and then freeze overnight.
3. Add carrots, bananas, coconut milk, maple syrup, and the rest of spices to your food processor or NutriBullet and blend.
5. Scoop, top with shredded coconut and enjoy!
